THE SPIRIT OF PAIRING
OUR LOCAL OLIVE OIL
The Essence of Tuscan Flavor
Our extra virgin olive oil is more than an ingredient — it’s the foundation of Tuscan cuisine. With its balance of fruitiness, pepper, and elegance, it elevates every dish it touches.
In the orchard below Chef Dani’s Villa Belpasso, you’ll find a grove of 600 olive trees he planted in 2003. The organic olive trees are a combination of four local varieties that make up the DOP for the Maremma region. The oil is certified organic by Italian DOP standards. Chef Danilo’s olives are harvested by hand each October and go through a cold-press process before being bottled resulting in a high-quality bright and spicy unfiltered oil. Chef Dani loves to pair this olive oil with grilled bread and salad. He suggests drizzling this oil as a finishing touch on your favorite dishes.

Chef’s Tips for Everyday Use
Use as a finishing touch: drizzle just before serving, to preserve aroma and freshness.
Pair with a pinch of sea salt to reveal its full flavor.
Keep it away from heat — store in a cool, dark place to maintain quality.
A little goes a long way: savor slowly, like a fine wine.
